Denmark: Cinnamon Bars

The Dish: Basically just baked sugar and butter
The Country: Denmark has two overseas constituent countries- The Faroe Islands and Greenland.


Ingredients:
1 egg 
2 1/3 cups all-purpose flour 
1 cup packed brown sugar 
2 tablespoons cinnamon
1 cup butter
2 teaspoons vanilla

some of the yummiest dough/ batter I've tasted

 
 
Procedure:
Preheat oven to 350°
Melt the butter.
Mix everything together
Put everything in a greased pan
Bake for 20 minutes
this picture really doesn't do justice to the yummy caramel color of these bars...


Notes: The bars were a little bit dry.  Maybe I used too much flour and not enough butter... ? Anyway, they were fine when served with vanilla ice cream.

Democratic Republic of the Congo: Tomato Sauce

The Dish: Tomato sauce
The Country: It is the second largest country in Africa by area.

Ingredients:
Two cans of tomato paste  (or 1 can and 2 diced tomatoes)
1 large onion, chopped
Vegetable Oil
1 bay leaf
nutmeg
salt
it almost matches my tea pot...



Procedure:
Cook onions in vegetable oil until golden-brown
Put all ingredients in a larger pan and boil for a few minutes.  Simmer for ten minutes.
looks appetizing, right?


Notes:
It's simple enough to make, but I'd rather just buy the store bought stuff.  Mine was almost too tomato-ey.

Czech Republic: Kolacky

The Dish: Pronounced kolotch-key
The Country: Total area: 78,866 km2


 Ingredients

1 8oz pack of cream cheese
2 sticks of butter
1/2 cup of granulated sugar
2 cups of flour
apricot filling
the dough could be used for anything.



Procedure:

Mix the cream cheese, butter, sugar, and flour into dough.  Refrigerate for three hours.
Later, preheat oven to 375 degrees.
Flatten dough.  
Use a pizza cutter or sharp knife to cut the dough into squares.  
Place a small scoop of apricot filling in the center of the square.  
Fold the dough into a little pocket.  It's totally fine if the filling squishes through the sides.
Bake for 20 minutes.
Eat.
they didn't really hold their shape...


Notes: The feeling leaked out a little more than I intended and made the whole thing a little mushy.  The taste was fine though.  My mother said that this was the best thing I've made so far.  Wow...

Cyprus: Potato Omelette

The Dish: Exactly what it sounds like...
The Country: Cyprus is the third largest island in the Mediterranean Sea.  (After Sicily and Sardinia)

Ingredients:
1 potato
Butter
2 eggs
Milk
Salt
my  tiny frying pan


Procedure:
Peel and slice the potato
Butter a small frying pan
Put the potatoes in the frying pan
Whisk the two eggs together.  Pour them into the frying pan.
Add milk and salt to taste.
Cook.
Eat.
my hand looks quite distorted.. but these are the eggs.


Notes:
The recipe should have also had tomatoes, but I couldn't find any this morning.  I think we used them in a salad last night.... oops.  Anyways, this was pretty simple and made for a good lazy Thursday breakfast.
